Dip Tips
1. STAY CLEAN & DRY. Always use a clean dry scoop. Sloppy dipping can leave frozen desserts tasting like the last flavor scooped. Using a wet scoop can leave ice crystals on product- just not pleasant. Make a point to store dippers in clean water and remove excess water before scooping. To make sure frozen desserts are in their best shape for scooping and serving, store between 10 & 12 F.
2. USE CIRCULAR REASONING. Start at the tub wall and move the dipper in a circular motion, spiraling toward the center of the tub. Feel free to turn the tub to make scooping easier.
3. GET SOME AIR. Did you know that frozen desserts are almost 50% air? This air is actually what gives ice cream, frozen yogurt and sherbet their distinctive flavor and texture. When you compress the product and force the air out, the character of the product changes, too (and not for the better). Try not to push your dipper more than 1/2 inch deep at a time.
4. FINISH WHAT YOU START. Begin dipping where your last scoop ended and never leave product along the sides of the tub. This will keep the frozen desserts fresh and the level in the tub even.
5. MORE THAN ENOUGH IS JUST A WASTE. Be fair to your customers and management. Always serve the portion promised - never more or less. To keep your desserts truly delicious, always serve them promptly to avoid melting.

RULE OF THUMB GUIDE-This table was created to help you determine your cost per serving of ice cream. Dipper portion weights are based on 216 ounces per3- Gallon can. You can use the informationon this chart to determine your cost per scoop by dividing your cost for a 3-Gallon can of ice cream by the number of scoops shown on the chart. Please keep in mind though that no two scoops are identical in size or weight. To get a more precise assessment of your cost per serving, it will be necessary to weigh each portion of ice cream from the dipper.
